Ube Cheesecake Cookies

Hi guys to day I will be sharing my version of Ube Cheesecake Cookies If you want to make re hydrated ube watch Ube Dream Cake here
https://youtu.be/dE4iym1e_Y8 For the Cookies 2 1/2 cups plain flour 1 1/2 tsp baking powder 1/4 tsp salt 3/4 cup room temperature butter 115 g cream cheese or 4 0z 1/3 cup ube halaya 3 eggyolk 1 1/2 tsp ube extract 3-6 drop purple gel food colouring 3/4 cup white choc chips 3/4 cashews or any like you have on hand
1 cup +1 tbsp sugar

Directions:

Combine the dry ingredients plain flour , baking powder and salt. Set aside we will sift this later.

Chop the cashews into small chunks or if you have food processor use it.

In a bowl combine the room temperature butter and cream cheese. (Not it is important for this 2 ingredients to be at room temperature so they combine nicely) Use handheld mixer to mix until well combined.

***Remember to keep mixing as you add another ingredient.

Add ube halaya (you can make your own or you can buy one)I provided a link on how to make this using ube powder.

Add the sugar.

Add the ube extract

Optional add purple food colouring as for this recipe I added 6 drops.

Add egg yolks one at time mixing in each addition.

Now sift in the dry ingredients. (plain flour, baking soda, salt).

At first use rubber spatula to mix then to make sure that everything is well combined use the handheld mixer to mixer for about a minute. Do not over mix.

Finally fold in the cashew nuts and the white choc chips.

Cover the bowl with cling wrap and let it rest in the fridge for atleast 1 hour.

After resting the dough. Pre heat oven at 180 deg C.

Measure each dough about 1tbsp each and roll it into a ball place in a baking pan lined with parchment paper. This cookie does not spread to much so you can put more than  8 in each pan.

Bake in a preheated oven for 10 minutes. If you decide to make the cookie a little bit bigger bake for 12 minutes.

Hope you enjoy this recipe. Happy baking.

Love,
